It’s that time of the year again! The time when we vegetable gardeners pay the ultimate price for the exuberance we felt during spring planting season. The result: The cucumber tsunami. Perhaps the force of nature spilling out into your yard is the ever-so-popular zucchini or squash. At the Gaver household, 2011 will go down as the year of The Cucumber.
So I took it to the experts: my friends on Facebook! It started out as a simple lamentation, actually quite innocent! Just a way to express my growing anxiety over the burgeoning growth of this audacious member of the gourd family.
“Exactly how many ways can one fix cucumbers? Zucchini and squash are one thing but cucumbers involve a level of creativity I just wasn’t born with.”
And the second tsunami occurred….. this time it was online! Apparently my Facebook Friends must also be members of the Secret Society of Culinary Cucumbers. I received TONS of great ideas for making the bland cucumber a lot more appealing.
And so, my friends, if you, too, suffer from cucumber overload, this post is for you!
Here are a few to tickle your palate:
Cucumbers in watermelon salad with feta cheese
Thinly sliced with onions and light sour cream.
Cucumber kimchee, which is a mix of Asian seasonings with white or rice vinegar and a splash of dark sesame oil.
Cut up cucumbers, tomatos and onions in a bowl. Mix equal amts of sugar, vinegar and olive oil and shake until sugar is dissolved. Cover veggies.
Jim Beam’s Red Stag, lemonade, ice tea, mint and cucumber slices…YUMMMY (this one came from a college sorority sister)
Cucumber slices with hummus on flat bread with lemon pepper seasoning…yum-o
Take mint from your garden, chop it up tiny, mix with cream cheese.. rub it on both sides of a slice of bread and put sliced cucumber in between.
Cold cucumber soup
Try them with peanut butter!! Don’t knock it till you’ve tried it.
Cucumber dip (write me if you want the recipe!)
Creamy cucumber/slaw dressing (again, I have the recipe and will share it if you are cucumber challenged!)
